Ingredients:
2 ½ c chicken broth
1 c long grain white rice (not quick cooking)
4 tbsp butter
1 white onion, diced
½ c heavy cream
1 tsp dried thyme
1 ½ pounds of chicken breasts, cubed
½ c Parmesan cheese, freshly grated
4 cloves garlic, minced
Fresh parsley, chopped, for serving
½ tsp dried rosemary, crumbled
Kosher salt and freshly ground black pepper, to taste
Directions:
Place a large skillet on the stove and turn the heat to medium-high. Add butter and allow it to melt.
Add the onion, then sauté for about 3 minutes or until translucent.
Add the chicken, then cook all sides for about 5 minutes or until they turn brown. Season the chicken with rosemary, thyme, salt, and pepper to taste.
Add the garlic, then sauté for about a minute or until aromatic.
Add the rice and chicken broth, then stir until well incorporated. Allow the mixture to boil.
Cover the skillet with the lid, then turn the down to medium-low. Simmer everything for about 15 to 20 minutes or until the rice is soft.
Add the Parmesan cheese and cream, then stir until well blended. Remove from the heat.
Sprinkle freshly chopped parsley and Parmesan cheese over each serving to garnish.
