Ingredients:
15 ounces can tomato sauce
1 spring of fresh rosemary chopped or ½ teaspoon dried
28 ounces can diced tomatoes
1 medium onion, diced
½ teaspoon dried oregano
4 large fresh basil leaves or ½ tsp dried basil
1 teaspoon olive oil
3 garlic cloves, minced
20 ounces three-cheese tortellini
4 c chicken stock
½ c shredded parmesan cheese + extra for garnish
½ c heavy cream
fresh basil, to garnish
shredded parmesan cheese, to garnish
½ teaspoon salt
¼ teaspoon pepper
Directions:
Place a 6-quart soup pot on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add garlic and rosemary, then sauté until aromatic.
Add onion and sauté until soft.
Add the tomato sauce, tomato slices, chicken stock, heavy cream, basil, oregano, salt, and pepper. Stir until well blended. Simmer everything for about 20 minutes.
Add the three-cheese tortellini into the pot, then cook for about 15 minutes or until soft.
Add the Parmesan cheese and stir until well blended.
Remove from the heat, then sprinkle shredded Parmesan cheese and freshly chopped basil on top to garnish.
Serve right away and enjoy!
