Ingredients:
3 garlic cloves minced
½ c nutritional yeast
3 c vegetable stock or bouillon & water
4 tablespoon vegan butter separated
2 c orzo
1 teaspoon salt
¼ teaspoon black pepper
½ c onion diced
2 teaspoon lime juice
½ teaspoon dried parsley
¾ c rice milk plain, unsweetened
Directions:
Place a large skillet on the stove and turn the heat to medium.
Add vegan butter and allow it to melt.
Add in the garlic, onion, and orzo. Sauté’ for a few minutes until the orzo becomes light brown. Make sure to stir from time to time.
Pour in the vegetable stock, then stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits. Allow the mixture to boil.
Simmer everything for about 13 minutes while stirring from time to time.
Add the rest of the butter, nutritional yeast, and rice milk. Stir until well blended. Allow the mixture to boil once again.
Reduce the heat, then add lime juice, salt, pepper, and parsley. Stir until well blended and simmer for one more minute.
Serve right away. Enjoy!
