Ingredients:
1 lb. chicken cut into bite-sized pieces
4 cloves garlic, minced
4 tbsp olive oil
½ tsp of kosher salt
freshly ground black pepper to taste
1-quart low-sodium chicken broth
1 lb. penne pasta, uncooked
2 ½ c heavy cream
14 ounces smoked sausage, sliced on the diagonal
4 ounces parmesan cheese freshly shredded, more as needed
1 ½ tbsp Cajun seasoning, plus more to taste
Italian Parsley garnish
Directions:
Place a large pot on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Season the chicken with salt and pepper. Make sure to coat them well.
Add the chicken into the hot oil and cook until brown.
Add the sausage and cook for a few more minutes until brown as well.
Add the garlic and sauté until aromatic.
Add the heavy cream, chicken broth, Cajun seasoning, and dried pasta. Stir until well mixed. Allow the mixture to simmer.
Turn the heat down to low and cook the pasta for about 20 minutes or until al dente.
Remove the pot from the stove, then add the Parmesan cheese. Stir until well blended.
Add the chopped parsley and more Cajun seasoning. Stir until well mixed.
Serve and enjoy!
