All the good things in life are in this One Pot recipe! I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go!
Ingredients:
2 tbsp (30 grams ) unsalted butter
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
500 grams (1 lb) chicken thigh, cut into bite-size pieces (Note 1)
2.5 tbsp flour (or 1 ½ tbsp cornflour/cornstarch)
2 cups (500 ml) milk (any, I use low fat)
2 cups (500 ml) chicken broth
1 ¼ cups (225 grams) long-grain white rice, uncooked (Note 2)
1 tsp dried thyme (or other herbs of choice)
Salt and pepper
1 large head of broccoli, broken/cut into small florets (400 – 500 grams or 14 oz – 1 lb)
2 cups (200 grams) shredded mozzarella or cheddar (or other cheese of choice) (Note 4)
Finely chopped parsley, optional garnish
Directions:
Step 1: Place a pot on the stove and turn the heat to high.
Step 2: Add in the butter and allow it to melt.
Step 3: Add in the onion and garlic, then sauté for 1 minute or until aromatic and translucent.
Step 4: Add in the chicken and cook until white.
Step 5: Reduce the heat to medium and stir in the flour for 1 minute.
Step 6: Add in the milk and continue stirring until well blended.
Step 7: Add in the broth, thyme, salt, and pepper. Stir until well combined.
Step 8: Allow the mixture to boil and immediately cover the pot.
Step 9: Reduce the heat to medium-low and cook for 12 more minutes.
Step 10: Remove the cover and add in the broccoli. Push it down a bit to the bottom.
Step 11: Cover and cook for another 3 minutes or until the broccoli is cooked through.
Step 12: Prepare the broiler or grill and preheat.
Step 13: Remove the cover of the pot and add in ½ of the cheese. Stir until well mixed and smooth.
Step 14: Sprinkle the remaining cheese over.
Step 15: Broil or grill until the cheese has melted completely.
Step 16: Sprinkle parsley on top of each serving.
Step 17: Serve hot and enjoy!
Notes:
Make sure to use chicken thighs because it has more fat.
I use long grain or medium grain rice because it is less sticky.
Feel free to use frozen broccoli instead of fresh ones. Just make sure to thaw them first before adding them into the pot.
You can use any kind of cheese for this recipe as well.
An important tip, do not cook the chicken all the way through because the brown colour may affect the entire dish.
