Roasted veggies and chicken with grated Parmesan cheese! This recipe has all the things you would want in a complete meal! It is pretty easy to prepare. All you need to do is to follow these easy steps, and you are good to go!
Ingredients:
1 large lemon, juice, and zest
5 tbsp olive oil, separated
1 and ½ heaping cups (½ lb.) baby red potatoes, sliced
1 large yellow onion, coarsely chopped
1 lb. boneless, skinless chicken breasts
1 tbsp dried parsley
1 head (1 heaping c) broccoli, chopped
½ tbsp minced garlic
2 tsp dried oregano
Freshly grated Parmesan cheese
1 tsp paprika
Optional: ¼ tsp red pepper flakes
1 heaping cup (5 oz.) of baby carrots, sliced in half
For Meal Prep: 1 c quinoa or rice
Seasoned salt and pepper
½ tsp EACH: garlic powder, onion powder
Directions:
Use paper towels to pat dry the chicken breasts and discard any excess fat. Chop them into ½-inch cuts and add into a mixing bowl.
Add onion powder, oregano, seasoned salt, garlic powder, paprika, pepper, and parsley into a mixing bowl. Whisk until well incorporated.
Add ½ of the seasonings, lemon juice, lemon zest, and 2 tbsp of olive oil over the chicken, then toss until fully coated.
Cover the chicken, then place the bowl in the fridge to chill for at least half an hour.
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Cover with parchment paper the inside of a large baking sheet.
Slice the baby carrots, red potatoes, and onion. Scatter them on the prepared baking sheet.
Drizzle 2 tbsp of olive oil and sprinkle the rest of the seasonings over the veggies. Toss until fully coated.
Place the baking sheet in the preheated oven and bake the veggies for about 20 minutes.
Slice the broccoli into small cuts. Add them onto the baking sheet together with garlic, then toss until well combined.
Drain the chicken and place them onto the pan. Put it back in the oven and bake the chicken for 20 more minutes. Remove from the oven.
Sprinkle the grated Parmesan cheese on top.
Serve right away. Enjoy!
