Talk about a sweetness overload loaf cake! Every bite of this luscious cake will only raise your appetite. If you are on a diet, I suggest going easy on this cake but if you are not, then, by all means, go crazy on this thing because it is very delicious. I promise you, it is!
Ingredients:
1 serving cooking spray
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup white sugar
3 large eggs
½ cup of vegetable oil
1 teaspoon vanilla extract
¾ cup sour cream
1 ¼ cups crushed chocolate sandwich cookies (such as Oreo®), divided
⅓ cup white chocolate chips
1 tablespoon powdered sugar
Directions:
Step 1: Ready the oven. Preheat it to 350 degrees F or 175 degrees C.
Step 2: Then, grease an 8 x 4-inch loaf pan. And using a parchment paper, line the pan leaving at least a 2-inch overhang on every side.
Step 3: In a medium mixing bowl, whisk the flour, baking powder, and salt.
Step 4: In a separate bowl, add the sugar, eggs, oil, and vanilla extract. Whisk until well mixed before mixing in the sour cream.
Step 5: Add the sour cream mixture on top of the flour mixture. With a rubber spatula, mix well. Then, fold in a cup of crushed cookies.
Step 6: Empty the batter into the prepared pan.
Step 7: Place in the preheated oven and bake for 40 to 50 minutes. Check the doneness by inserting a toothpick in the center of the cake. When it comes out clean the cake is done.
Step 8: Upon removing the cake from the oven, instantly top it with white chocolate chips and the rest of the crushed cookies.
Step 9: Using the parchment paper overhang, lift the loaf out of the pan and let the loaf cool. Then, dust with powdered sugar.
