There are plenty of types of potato salad out there, but this one in the backyard potato salad is straight up, old school, summer party. Salad is among those dishes that are always in our table, and not a single memory of us not having it. My father will always make a salad every meal, even for a snack, and it’s his way of giving us the right amount of nutrition. There are times that I only eat this without anything, just this salad.

This typical potato salad reminds me of the dish that I had grown up eating. This creamy old-fashioned potato salad uses very basic ingredients to produce vivid flavors. Try this Old-Fashioned Potato Salad, and enjoy it with your loved ones.
Ingredients:
5 lbs red potatoes, chopped
3 cups mayonnaise
2 cups finely chopped pickles
(5) eaches hard-cooked eggs, chopped
½ cup chopped red onion
½ cup chopped celery
3 tbsp prepared mustard
1 tbsp apple cider vinegar
1 tsp salt, or to taste
½ tsp ground black pepper
Directions:
Add and put potatoes into a large pot and cover with salted water, let it boil. Then lower heat to medium-low, simmer until tender for 10 minutes, then drain. Return potatoes to empty pot to dry while you mix the dressing., add and sprinkle with salt.
In a large bowl, add and stir mayonnaise, pickles, hard-cooked eggs, red onion, celery, mustard, cider vinegar, a tsp of salt, and pepper. Then fold potatoes into the mayonnaise mixture. Allow it to chill for at least six hours, or overnight, before serving.
Note:
Old-fashioned potato salad can be baked as long as it is kept covered and cooled up to one day in advance. The longer it takes to mix the ingredients, the better it tastes.
