Ingredients:
FOR THE PUDDING:
2 large Eggs – slightly beaten
¼ c butter
½ c sugar
2 c milk
1 (1 lb.) loaf (4 c) French bread – cubed 1 ½ inches
½ teaspoon ground nutmeg
1 tablespoon vanilla extract
½ c raisins (golden raisins are my favorite.)
FOR THE VANILLA SAUCE:
½ c heavy whipping cream
½ c firmly packed brown sugar
1 tablespoon vanilla extract
½ c sugar
½ c butter
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Brush a 2-quart casserole with butter.
To Make the Pudding:
Scatter bread slices on a baking sheet.
Place the baking sheet inside the preheated oven and toast the bread for about 8 to 10 minutes. Remove from the oven.
Transfer the toasted bread into the greased casserole together with the raisins. Stir until well mixed.
Place a saucepan on the stove, then add ¼ cup of butter and milk. Stir until well blended. Turn the heat to medium and heat the mixture for about 4 to 7 minutes. Remove from the heat.
Add eggs, nutmeg, sugar, and vanilla into a mixing bowl. Whisk until well incorporated.
Pour the milk mixture into the bowl with the egg mixture, then stir until well blended.
Pour the mixture on top of the bread and make sure to coat them well.
Place it inside the preheated oven and bake for about 40 to 45 minutes or until done. Remove from the oven and allow it to cool at room temperature for at least 10 minutes.
To Make the Vanilla Sauce:
Place a saucepan on the stove and turn the heat to medium.
Add butter, heavy whipping cream, and sugars. Whisk for about 5 minutes or until well mixed and thick.
Remove from the stove, then add vanilla and stir until well blended.
Serve the pudding with the vanilla sauce on top. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 5 days or 2 months in the freezer.
Feel free to skip the raisins if you prefer.
You can add cinnamon for more flavor!
