Ingredients:
¾ cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
½ cup butter softened
½ cup peanut butter
½ cup white sugar
½ cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick-cooking oats
3 tablespoons butter, softened
1 cup confectioners’ sugar
½ cup smooth peanut butter
2 ½ tablespoons heavy whipping cream
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: In a large mixing bowl, add ½ cup of peanut butter, brown sugar, white sugar, ½ cup of butter, vanilla, and egg. Beat until well mixed.
Step 3: In another mixing bowl, add the flour, baking powder, salt, and baking soda. Stir until well mixed.
Step 4: Transfer the flour mixture into the creamed mixture and stir until well blended.
Step 5: Add the oatmeal and stir until well combined.
Step 6: Spoon the batter into a baking sheet. Press them lightly to become ¼-inch thick cookies.
Step 7: Place the baking sheet inside the preheated and bake for 10 minutes or until golden brown.
How To Make the Filling:
Step 1: In a small mixing bowl, add 3 tablespoons of butter, ½ cup smooth peanut butter, confectioners’ sugar, and cream. Beat until well mixed and creamy.
Step 2: Spread the filling over half of the warm cookies and top each with the other half of the cookies.
Step 3: Serve and enjoy!
