This was by far the best thing I had this week! This Yellow Thai Curry is a must-try! With this very simple set of ingredients, you will surely have the best meal today. Enjoy!
Ingredients:
2 c thinly sliced peeled carrots, about 12 oz.
1 large onion, 12 ounces
2 c cubed potatoes, Yukon golds, 12 oz.
1 tbsp avocado oil, or other oil suitable for high heat
2 tbsp yellow curry paste
1 tsp ground turmeric
2 tbsp freshly squeezed lime juice
2 tbsp peanut butter, or cashew butter for paleo
1.5 lbs. boneless skinless chicken thighs, cubed into ½-inch pieces
2 cans (13.66 oz. or 403ml each) coconut milk
1 tbsp lime zest or 2 kaffir lime leaves if available
1 tsp sea salt, more or less to taste if you use the fish sauce
4 c chopped baby spinach, 4-6 oz.
Optional: 1 tbsp fish sauce
Optional Toppings:
lime wedges
Chopped fresh cilantro
roughly chopped peanuts, or cashews for paleo
Directions:
Prepare the onions by peeling and slicing them into thin pieces. Set aside as well as the carrots.
Put a 12-inch skillet on the stove and turn the heat to medium-high.
Add avocado oil and allow it to become hot.
Add the chicken pieces, then stir and cook for a few minutes until they turn brown. Transfer onto a clean plate.
In the empty skillet, add the carrots and onions. Sauté for a few minutes until done.
Add the potatoes, turmeric, and curry paste. Stir and cook for another minute.
Add the lime zest and coconut milk, then stir until well blended.
Allow the mixture to boil, then reduce the heat to low and simmer for a few minutes until the texture becomes thick.
Put the chicken back into the skillet as well as the nut butter, salt, fish sauce, and lime juice. Stir until well blended.
Remove from the stove, then add the spinach and stir until well mixed. Allow the spinach to wilt for a few minutes.
Serve and enjoy!
