Ingredients:
2 c finely chopped broccoli florets
2 tbsp water
½ c shredded pepper jack cheese
¼ c mayonnaise
4 small button mushrooms, sliced
1 tsp garlic powder
4 large chicken breasts
1 tsp paprika
salt and ground black pepper to taste
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line with aluminium foil on a baking sheet.
In a microwavable bowl, add water and broccoli. Place it inside the microwave and cook for about 2 minutes.
Drain the water, then place the broccoli into a large mixing bowl.
Add mayonnaise, mushrooms, garlic powder, and pepper jack cheese. Toss until well combined.
Season with salt, pepper, and paprika the chicken breasts.
Create a deep pocket on each chicken breast. Use a knife to do so.
Fill each chicken breast with the broccoli mixture, then arrange them onto the prepared baking sheet.
Place the baking sheet inside the preheated oven and bake for 35 minutes or until done.
Remove from the oven and allow the stuffed chicken breasts to cool for a few minutes.
Serve warm and enjoy!
