Ingredients:
Meatballs
1 tablespoon fresh parsley, finely chopped
1 tablespoon Italian Seasoning
0.5-pound Lean ground beef
1-pound Lean ground pork
12 ounces mozzarella cheese, cut into small cubes
1 Egg
1 teaspoon salt
0.5 teaspoon ground black pepper
Sauce
14 ounces crushed tomatoes, canned
1 clove garlic, chopped
1 bay leaf
1 tablespoon olive oil
1 teaspoon black pepper
1 tablespoon fresh parsley, or basil, finely chopped
½ small onion, finely chopped
Directions:
For the Marinara Sauce:
Place a pan on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the onion slices, then sauté until soft.
Add the garlic, then sauté until aromatic.
Add the bay leaf, fresh parsley, canned crushed tomatoes, and black pepper. Stir until well blended.
Reduce the heat to low, then simmer everything for about 20 minutes.
For the Meatballs:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line with parchment paper a sheet pan.
In a large mixing bowl, add the seasonings, egg, and meat. Use your clean hands to mix until well combined.
From the meat mixture into small meatballs, then add cheese in the middle and close it up.
Arrange the meatballs onto the prepared pan. Make sure to leave a small space between each meatball.
Place the pan inside the preheated oven and bake the meatballs for about 15 to 20 minutes or until done.
Remove from the oven and allow the meatballs to rest for a few minutes at room temperature.
Sprinkle freshly chopped basil on top to garnish.
Serve warm with your homemade marinara sauce. Enjoy!
