Melt-in-your-mouth buttery tender beef chuck roast smothered in a creamy mushroom onion gravy. Throw this mouthwatering dish easily in a roaster or slow cooker. I suggest doubling the gravy ingredients as this will be the best gravy you’ll ever taste!
Ingredients
1 tbsp olive oil
5 lbs chuck roast
1 large yellow onion, chopped
1 (454 g.) package of white or cremini mushrooms
1 ¼ c. water
1 (1-oz.) package of dry onion soup mix
2 (10.75-oz.) cans of cream of mushroom soup
How to make Creamy Mushroom Beef Chuck Roast
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Into a hot skillet or Dutch oven, add the olive oil. Add the chuck roast and sear over medium heat until all sides are brown. Transfer the chuck roast to the Dutch oven or lidded roaster. Around the chuck roast, scatter the mushrooms and onion.
Step 3: Combine the soups and water until smooth, then pour this over the roast.
Step 4: Put the lid on and bake the roast in the preheated oven for about 20 minutes. After 20 minutes, adjust the oven temperature to 325 degrees F and continue to bake for 4 to 5 hours more or until the roast easily pulls apart.
Step 5: Onto a plate, transfer the roast. To make the gravy, stir the mushrooms, onions, and drippings. Pour the gravy over the roast. Enjoy!
Slow Cooker:
Heat the olive oil in a skillet over medium heat. Once hot, add the chuck roast and cook until all sides are brown. Then, transfer the roast into a slow cooker. Around the roast, place the mushrooms and onion. Pour the soups and water mixture over the chuck roast. Close and seal the lid. Set to cook on low for 8 to 10 hours until the roast easily pulls apart. Onto a plate, transfer the roast. To make the gravy, stir the mushrooms, onions, and drippings. Pour the gravy over the roast. Serve and enjoy!
Note:
If desired, double the gravy ingredients.
