Ingredients:
Chocolate Cake Batter
½ c oil canola, vegetable, coconut, etc. (120mL)
¾ c unsweetened cocoa powder 75g
1 c milk whole, 2%, 1%, Almond, etc. (240mL)
2 teaspoons vanilla extract 10mL
2 c cake flour or all-purpose flour 240g
1 ½ teaspoons baking soda 7g
2 large Eggs
2 c white granulated sugar 400g
1 c very hot water 240 mL
2 teaspoons baking powder 8g
1 teaspoon salt 5g
Chocolate Butter Cream Frosting
1 c unsweetened cocoa powder 100g
1 ½ c unsalted butter softened (340g)
2 teaspoons vanilla extract 10mL
½ c milk whole, 2%, 1%, skim, etc. (120mL)
5 c powdered sugar confectioner’s, icing sugar (600g)
Directions:
For the Cake:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
In a mixing bowl, add all the dry ingredients. Whisk until well blended.
Add the eggs, vanilla extract, and milk. Stir until well blended.
Add the hot water gradually and stir every addition until well mixed.
Brush with butter two 9-inch cake pans, then sprinkle flour on it.
Fill the cake pans with the batter and spread it evenly.
Place the batter inside the preheated oven and bake for about 30 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove the cakes from the oven and allow them to cool at room temperature.
Cover the cakes with plastic wrap, then place them inside the fridge to chill for at least 2 hours or overnight.
For the Frosting:
Add the cocoa powder and softened butter into a mixing bowl. Stir until well blended.
Add the vanilla extract and stir until well blended.
Add the sugar gradually and beat every addition until well mixed.
Add ⅓ of the milk, then stir until well blended.
Brush the frosting over the cakes. Make sure to coat them well.
Top the first cake with the other cake. Frost the sides of the two cakes.
