This banana bread is the best of the best! You are so in for a treat, friends. Enjoy!
Ingredients:
½ c (1 stick) butter, softened
½ c brown sugar, packed
½ c granulated sugar
2 large Eggs
2 tsp vanilla extract
1 c mashed ripe banana (9 oz)*, about 2 and ½ medium bananas
1 c all-purpose flour, spooned and levelled
½ c old fashioned oats, blended into a powder**
1 tsp baking soda
2 and ½ tsp baking powder
¾ tsp kosher salt
½ c sour cream
¼ tsp cinnamon, optional
⅛ tsp nutmeg, optional
⅛ tsp cloves, optional
½ to ¾ c toasted pecans or walnuts, optional
Directions:
Step 1: Prepare the oven and preheat to 350 degrees F.
Step 2: Grease a 9×5-inch loaf pan, then line it with parchment paper.
Step 3: In the bowl of a stand mixer, add the butter and beat until smooth.
Step 4: Add in the ½ cup of white and ½ cup of brown sugar. Beat until well mixed.
Step 5: Add in 2 teaspoons of vanilla and 2 eggs. Beat until well combined. Make sure to scrape the sides of the bowl.
Step 6: Mash the bananas and put them into the mixture and stir until well combined.
Step 7: Add in 1 cup of flour and stir until well mixed.
Step 8: In a food processor, pulse ½ cup of old fashioned oats until the turn powder.
Step 9: Add the powdered oats into the mixture and stir until well combined.
Step 10: Add in 1 teaspoon of baking soda, ¾ teaspoon of Kosher salt, and 2 ½ teaspoons of baking powder. Stir until well combined.
Step 11: Add in cloves, nutmeg, and cinnamon.
Step 12: Transfer the dry ingredients into the wet ingredients and stir until well combined.
Step 13: Add in ½ cup of sour cream and stir until well mixed.
Step 14: Transfer the batter into the prepared pan and use a spatula to smoothen the top.
Step 15: Place it inside the preheated oven and bake for 55 to 65 minutes or until done.
Step 16: Remove from the oven and allow it to cool at room temperature.
