Ingredients:
Crust
2 tablespoons (28g) granulated sugar
6 tablespoons (86g) salted butter, melted
1 ¾ c (220g) finely crushed graham crackers (about 14 full sheets)
Filling
3 (8 ounces) pkg. cream cheese, well softened
4 large Eggs
½ teaspoon ground nutmeg
¼ c (60ml) heavy cream
1 ½ teaspoon ground cinnamon
1 c (215g) packed light-brown sugar
6 tablespoons (75g) granulated sugar
1 ½ c (362g) canned pumpkin puree
3 tablespoons (30g) all-purpose flour
½ teaspoon ground ginger
Chopped pecans or lightly sweetened whipped cream (optional)
⅛ teaspoon ground cloves
Flaked sea salt, such as Maldon
1 Homemade caramel sauce
1 teaspoon vanilla extract
Directions:
Crust:
Prepare the oven and preheat to 162 degrees C or 325 degrees F.
Add 2 tablespoons of granulated sugar and crushed graham crackers into a mixing bowl. Whisk until well blended.
Add melted butter, then stir until well mixed.
Line with parchment paper a 24-cup muffin tin.
Fill each muffin cup with the mixture.
Place it inside the preheated oven and bake for about 5 minutes or until done.
Remove from the oven and allow them to cool for a few minutes at room temperature.
Filling:
Add granulated sugar, flour, nutmeg, brown sugar, cloves, cinnamon, and ginger into a mixing bowl. Stir until well blended.
In another mixing bowl, add cream cheese.
Transfer the sugar mixture into the bowl with the cream cheese, then beat until well blended.
Add eggs gradually and beat every addition until well blended.
Add the vanilla and pumpkin, then stir until well blended.
Pour the mixture over the graham cracker.
Place them inside the preheated oven and bake for about 25 minutes or until done.
Remove from the oven and allow them to cook completely.
Place them inside the fridge to chill for at least 3 hours.
Add caramel sauce on top and a bit of salt.
Serve and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge.
