These are the prettiest mini pecan pies! They are the perfect mini treat for any occasion. Mt favorite on Holidays and Thanksgiving. These mini pecan pies are incredibly easy and quick to whip up. They can also be made in advance. This grab-and-go mini treat is an amazing dessert. And these mini pecan pies freeze beautifully!
Ingredients
1 tbsp unsalted butter, melted
1 large egg, beaten
2 9” homemade pie crusts (or 1 store-bought 14 oz. refrigerated box)
2 tbsp granulated sugar
⅓ c. light corn syrup
¼ c. brown sugar
1 tsp vanilla extract
½ c. chopped pecans
pinch of salt
How to make Mini Pecan Pies
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using nonstick cooking spray, generously grease a standard-size 12-cup muffin pan.
Step 2: After gently rolling out the pie crusts, cut circles using a glass or cookie cutter with a 3.5-inch diameter. If you cut close to the edges and one another, you should be able to make 6 circles from each crust.
Step 3: Into each muffin slot, carefully press the dough rounds.
Step 4: Place the brown sugar, granulated sugar, melted butter, beaten egg, corn syrup, vanilla extract, a pinch of salt, and chopped pecans in a medium mixing bowl. Mix well until completely blended.
Step 5: With 1 ½ tbsp of the filling, fill each pie crust.
Step 6: Place in the preheated oven and bake for about 25 minutes or until the center begins to solidify.
Step 7: Remove from the oven when done and cool the pies completely in the pan.
Step 8: Once the pies are cooled, gently run a dull knife around the outer crust. This will loosen the parts that might be stuck. Then, take the pies out of the pan using the same knife.
Step 9: Serve the Mini Pecan Pies. Enjoy!
