Ingredients:
1 Egg, lightly beaten
½ c onion, chopped
1 ½ lbs. lean ground beef (or ground turkey)
⅔ c panko bread crumbs
1 tbsp mustard
1 ½ tsp chilli powder
½ tsp garlic powder
1 tbsp barbecue sauce
½ tsp salt
½ tsp freshly ground black pepper
Meatloaf sauce:
½ c ketchup
¼ tsp ground nutmeg
2 tsp Dijon mustard
⅓ c light brown sugar
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add the ground beef, onion, breadcrumbs, mustard, 1 tablespoon BBQ sauce, egg, chilli powder, salt, pepper, and garlic salt. Use your clean hands to mix everything until well mixed.
Fill each cup of a 12-cup muffin tin with the meat mixture.
Place them inside the preheated oven and bake for about 15 minutes.
Add all the ingredients for the sauce into a mixing bowl. Stir until well blended.
Remove the meatloaf from the oven, then discard any excess fat by using a paper towel.
Top each meatloaf with the delicious sauce and spread it evenly.
Put it back inside the oven and bake for another 10 to 15 minutes or until done.
Remove from the oven and let the meatloaf rest for a few minutes at room temperature.
Serve warm with mashed potatoes and more sauce. Enjoy!
