This lemon curd is my favourite. Growing up, I have always been a huge fan of this recipe. My mom made it all the time. It is my favourite to go with bread or even cake! A big thanks to my mom for teaching me this simple and easy recipe because I get to make it for my kids as well. They could not get enough of this creamy and smooth curd. I always make sure that I have lemon curd in the fridge because my youngest kid keeps on reminding me that I should always make it for her. Kids, right? Anyway, give this one a try and feel free to add more ingredients if you wish. However, make sure to follow the cooking process for you to achieve the perfect taste and texture of this incredible curd!
Ingredients:
1 cup white sugar
3 large eggs
1 cup fresh lemon juice
3 lemon (2-⅛″ dia)s lemons, zested
½ cup unsalted butter, melted
Directions:
Step 1: Add the eggs and sugar in a microwave-safe bowl. Whisk until creamy.
Step 2: Add the butter, lemon zest, and lemon juice. Stir until well blended.
Step 3: Place inside the microwave and cook until thick. Stir every minute until you achieve your preferred thickness.
Step 4: Remove from the oven and transfer it into small sterile jars.
Step 5: Place inside the fridge to chill.
Step 6: Serve and enjoy!
Note:
You can store this Lemon Curd in the fridge for up to three weeks.
Make sure to stir it every minute to prevent the eggs from forming bits.
