This Mexican Tater Tot Casserole is always a hit! A winner dinner that is incredibly delicious, hearty, and a little spicy. A very comforting meal perfect for the whole family! If you love Tater Tot casseroles, this Mexican Tater Tot Casserole is a must!
Once you taste this casserole, you’ll sure be adding this to your regular meal plan. It is seriously good and has been one of my family’s favorite meals. The bottom layer of this casserole is a mouthwatering mixture of spicy ground beef, peppers, and onions that tastes like a taco filling, then, covered with queso, Tater tots, and tons of melted cheese. What’s not to love?
Ingredients
1 package Taco Seasoning
1 pound lean ground beef
1 red pepper, chopped
1 onion, chopped
1 yellow pepper, chopped
1 jar queso (394 ml)
1 orange pepper, chopped
1 c. cheddar cheese, shredded
¾ of a 1 kg package of frozen Tater Tots
How to make Mexican Tater Tot Casserole
Step 1: Into a heated large skillet over medium heat, cook the ground beef, onions, and peppers for about 7 to 8 minutes until the beef is brown and the peppers and onions are tender. Then, add the taco seasoning and stir until incorporated.
Step 2: Prepare the oven. Preheat it to 400 degrees. Using cooking spray, grease a large casserole dish.
Step 3: On the bottom of the prepared casserole dish, evenly spread the beef mixture and add the queso on top, completely covering the beef mixture. Next, cover everything with Tater tots.
Step 4: Place in the preheated oven and bake for about 40 minutes. Take the casserole out of the oven after 40 minutes and sprinkle the cheddar cheese on top. Return to the oven and resume baking for another 5 minutes or until the cheese has melted.
Step 5: Serve the Mexican Tater Tot Casserole immediately. Enjoy!
