Yes, three basic ingredients that will surely make you very satisfied! If you want, you can add more to it. However, it is better to try this recipe as is because I promise you, it is simply the best! Just follow the directions that I have listed for they will guide you to perfection! Ingredients:
10 empanada dough discs
2 c Mexican Street Corn Salad
Salsa or Pico de Gallo for serving
Directions:
Prepare the air fryer and preheat to 162 degrees C or 325 degrees F.
In the middle of each empanada dough, add 3 tbsp of the Street Corn Salad.
Fold each dough into two.
Make sure to press out any air inside.
Seal the sides by pressing them.
Use a fork to crimp the sealed sides.
In a mixing bowl, add an egg and beat until creamy. Brush the beaten eggs all over the empanadas.
Place them into the preheated Air Fryer, then cook for about 20 minutes or until they turn golden brown.
Remove from the fryer onto a clean plate and allow them to rest for at least 3 minutes.
Serve warm with salsa or Pico de Gallo. Enjoy!
