Ingredients:
4 ounces tomato paste
1 teaspoon ground cumin
1 tablespoon ground mild chilli powder
1 white onion diced
½ teaspoon salt
3 pounds beef chuck roast
1 c beef broth
Optional/Toppings
diced onions
cilantro
12 tortillas
cotija cheese
Directions:
Scatter the onions into a 6-quart crockpot.
Place the chuck roast on top of the onions.
In a mixing bowl, add tomato paste, seasonings, and beef broth. Stir until well blended.
Add the liquid mixture into the pot on top of the chuck roast.
Cover the pot and seal. Cook everything for about 4 hours on a high setting or 8 hours on a low setting.
Open the pot, then use two forks to shred the chuck roast into small pieces. Stir everything until well mixed.
Scatter the tortillas over as well as your favourite toppings.
