Rice, meat, corn, cheese, tomato sauce, and a lot more! This One-Pot Mexican Rice Casserole is surely one to try! This complete meal is a total family comfort food! Made with basic ingredients, this recipe is very budget-friendly! Our family dinner is not complete without this rice casserole. It’s some kind of a tradition for us every weekend! I won’t make this long because it is time to go to your kitchen and start prepping! I don’t want you to waste more time not knowing how delicious this casserole is. Enjoy!
Ingredients:
1 c long-grain white rice,
1 ½ c beef broth
2 tablespoons Taco seasoning
1 pound of ground beef
½ c salsa
1 c shredded cheese
8 ounces tomato sauce
1 15-ounces can of corn, drained
1 small onion, diced
1 teaspoon garlic powder
salt & pepper, to taste
Directions:
Place a large skillet on the stove and turn the heat to medium-high.
Add the ground beef, then cook for a few minutes until crumbly and brown. Season with salt and pepper to taste.
Add garlic and taco seasoning, then cook for a few minutes until aromatic.
Add corn, broth, salsa, tomato sauce, and rice. Stir until well combined. Allow the mixture to boil.
Reduce the heat to low, then cover the skillet. Simmer everything for about 20 minutes or until the rice is cooked through.
Remove the skillet from the heat, then sprinkle cheese on top.
Cover the skillet and allow the cheese to melt completely for a few minutes.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to one week.
Feel free to add more seasonings if needed.
You can use your preferred rice for this recipe, but I highly suggest you use Mexican rice for the best experience!
