Mexican food is one of my favorite cuisines. I love the combination of spices and flavors in dishes like enchiladas and tacos. One of my favorite Mexican recipes is for burrito pie, a delicious casserole that is perfect for a family dinner. Burrito pie is made with layers of tortillas, beans, meat, and cheese. The pie is then baked until the cheese is melted and bubbly. I like to serve mine with a dollop of sour cream on top. Yum!
Ingredients:
2 lbs. Ground beef
1 superfine dice from a yellow onion
2 cloves garlic, minced
2 15 oz. Cans of refried beans
1 15 oz. 1 15 oz. can of fire-roasted tomatoes, blended into a blender
1 4 oz. Can of green chiles
¾ cup store-bought salsa
3 Tbsp. 3 Tbsp.
4 to 5 cups of Spanish rice
1 lb. 1 lb.
6-8 flour tortillas
Optional Garnishes
Sour cream
Guacamole
Sliced olives
Salsa
Chop jalapeno
Instructions:
Preheat oven to 350°F
Do not wait to make Spanish rice.
Brown the onion and ground beef in a large skillet until they are no longer pink. As the meat cooks, break up the beef. Get rid of any grease.
Mix in the garlic, fire-roasted tomato, salsa, and green chiles. Stir until well combined. If the mixture appears dry, add ½ cup water. You will need moisture to dissolve taco seasoning.
Stir in the refried beans. Simmer for 20 minutes.
Use an oven-proof 9×13 dish or larger.
To cover the bottom of the dish, place a thin layer of bean/beef mixture.
Add a layer of flour tortillas to the top. It is fine if the tortillas overlap a little. To fill in the gaps, cut small pieces of tortilla.
Then, place a thin layer of Spanish rice on top of the tortillas. Next, add another layer of bean/beef mixture. Next, add cheese to the top of your bean/beef mixture.
Continue to add layers until the dish is full. End with the bean/beef layer, topped with a final layer of cheese. You can add a little more cheese to the last layer to make it nice and creamy.
Bake at 350°F for 20-30 minutes, turning off the heat.
Serve it with your favorite garnishes, such as sour cream or guacamole.
