Ingredients:
1 c parmesan cheese (or sharp Cheddar, or Asiago) divided
4 boneless, skinless chicken breasts trimmed of excess fat
1 c mayonnaise (or Greek yoghurt for a healthier option)
1 teaspoon garlic powder
1 teaspoon seasoning salt
½ teaspoon black pepper
Directions:
Slice each chicken breast into three large pieces.
Add milk into a large mixing bowl.
Add the chicken pieces into the bowl with milk. Use your hands to soak the chicken completely.
Place the bowl inside the fridge and let the chicken pieces soak in milk for at least 30 minutes or overnight.
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Add ½ cup of Parmesan cheese, seasonings, and mayonnaise into a mixing bowl. Stir until well blended.
Remove the chicken pieces from the milk, then lay them into a 9×13-inch baking dish.
Add the cheese mixture over the chicken breasts and spread it evenly.
Sprinkle the rest of the Parmesan cheese on top of the chicken.
Place the baking dish inside the preheated oven and bake the chicken for 45 minutes or until done. Broil for another minute or until the top turns brown.
Remove from the oven and allow them to rest for a few minutes at room temperature.
Garnish with freshly chopped parsley.
