I will never get tired of recommending this recipe to my loved ones! Oh, man, you have got to give this one a try! Every bite of this stuffed pork is just pure joy! The feta cheese and spinach gave very rich flavours to it. Oh, man, you are so in for a treat. Enjoy!
Ingredients:
1 ½ pounds pork tenderloin
For the filling:
½ a 7 oz. container sundried tomatoes packed in oil (About 6 tomato pieces), chopped
A pinch of red pepper flakes
1 tsp olive oil
5 c packed baby spinach
3 oz. feta cheese
3 garlic cloves
Pinch salt
For the coating:
2 tbsp olive oil
2 tsp dijon mustard
½ tsp black pepper
¼ c balsamic vinegar
3 cloves garlic, grated
1 tsp lemon zest
1 heaping teaspoon Kosher salt
1 tbsp rosemary, chopped
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Place a skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add grated garlic and red pepper flakes, then sauté until aromatic.
Add the spinach and cook until wilted. Season with salt to taste.
Transfer the spinach mixture on a paper towel, then squeeze it to discard most of the liquid.
Transfer the squeezed spinach into a mixing bowl, then add the feta cheese and tomatoes. Stir until well mixed.
To Make the Topping:
In a mixing bowl, add oil, mustard, balsamic vinegar, garlic, salt, pepper, lemon zest, and rosemary. Stir until well mixed.
Assemble:
Slice the tenderloin from the centre. (Lengthwise)
Top it with the spinach mixture and spread it evenly.
Fold the loin, then tie it with kitchen twine. Repeat the process with the rest of the ingredients.
Arrange the stuffed pork into a roasting pan. Add the topping on top and spread it evenly.
Reduce the heat of the oven to 375 degrees F.
Place them inside the preheated oven and roast for about 20 to 30 minutes or until done.
Remove from the oven and allow them to cool for a few minutes at room temperature.
