Ingredients:
¼ c milk
½ c shredded Parmesan cheese
1 c sour cream
4 ounces goat cheese
½ teaspoon salt
2 pounds potatoes
3 tablespoons butter
Directions:
Slice the peeled potatoes into medium cuts.
Place a large pot with water on the stove, then add the potato slices.
Turn the heat to high and allow the water to boil. Cook the potatoes for a couple of minutes until fork-tender. Drain and put the potatoes into a bowl.
Use a potato masher to mash the cooked potatoes.
Add sour cream, salt, butter, and goat cheese over the potatoes. Mash again until well blended.
Pour milk over the potato mixture and mash once more until the texture becomes smooth.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Transfer the mashed potatoes into a heat-proof casserole dish and spread it evenly.
Sprinkle Parmesan cheese over the mashed potatoes.
Place the casserole dish inside the preheated oven and bake for about 40 minutes or until the top turn golden brown.
Remove the mashed potato casserole from the oven and allow it to rest for a few minutes.
Serve warm and enjoy!
Notes:
I suggest you use herbed goat cheese for this recipe.
You can prepare this the night before and bake it the next day.
Feel free to exchange goat cheese with sour cream.
The dairy products should be at room temperature.
