Ingredients
2 cups all-purpose flour
½ tsp. Salt
1 cup unsalted butter, room temp
½ cup powdered Sugar
½ Tbsp. vanilla extract
¾ cup chopped maraschino cherries – It is important to spread the cherries on a paper towel after chopping in order to extract all liquid. Or you can use dried Maraschino cherries
⅔ cup mini or regular chocolate chips
Directions
Chop cherries, place them on a paper towel, and then cover the towel with a paper towel to absorb any liquid.
Mix flour and salt in a bowl.
Mix 1 cup of unsalted butter and ½ cup powdered sugar in a large bowl or stand mixer. Add the vanilla.
Mix flour and salt together. Continue mixing on low speed until you see larger clumps.
Use a rubber spatula, or a wooden spoon to gently stir in chocolate chips.
Make a log out of the dough and press it down. Otherwise, it will crumble when you cut the cookies. The log should be approximately 2 inches thick. Wrap it in plastic wrap and let it chill in the refrigerator for at least 1 hour.
After the dough has chilled, heat the oven to 325°F. Line a baking sheet using parchment paper.
Slice the chilled log into ¼- or ⅓-inch thick slices. If the slices are too crumbly, you can press them together with your hands. Place the slices on the baking sheet, leaving a 12-inch space between them.
Bake the cookies for 18-20 minutes, and then turn the pan over after 10 minutes. The cookies will become golden brown on the bottom, and the top will set.
Let them cool on a baking tray for 10 minutes, then transfer them carefully to a rack to cool completely.
