This recipe has always been a part of my family since I was a little kid! I am so glad that my mom taught me how to cook this incredible potato salad! Feel free to add more ingredients if you prefer. Ingredients:
5 pounds Idaho potatoes, peel and cubed
½ medium onion, chopped fine
5 hard-boiled eggs, chopped
¼ cup sweet pickle cubes or relish
½ cup dill pickle cubes or relish
1 stalk(s) celery, diced, optional
salt and pepper to taste
1.5-2 cups Hellman’s mayonnaise
1.5-2 tablespoons mustard
paprika, for garnish, optional
1 hard-boiled egg, sliced, for garnish, optional
Directions:
Step 1: Slice the peeled potatoes into 1-inch cuts and arrange them into a 5-quart pot. Add enough water to submerge them.
Step 2: Place the pot on the stove and turn the heat to high. Allow the water to boil and cook the potatoes for about 8 minutes or until just done.
Step 3: Drain the potatoes and rinse with cold water to stop the cooking process.
Step 4: In a small mixing bowl, add the eggs and onion. Stir until well mixed.
Step 5: In another mixing bowl, add the celery, mayonnaise, pickles, mustard, salt, and pepper. Stir until well mixed.
Step 6: Add the eggs and onions into the cooled potatoes. Toss until well combined.
Step 7: Add the mayonnaise mixture and stir toss until well mixed.
Step 8: Add the sliced hardboiled eggs over everything and garnish with paprika.
Step 9: Serve and enjoy!
