Ingredients:
1 tbsp cornstarch
1 ½ tsp dark soy sauce
1 tsp ginger (grated)
2 tbsp oil
2 lbs. boneless skinless chicken thighs (900g, cut into small chunks)
2 tbsp brown sugar
3 ½ tbsp soy sauce
1 ½ tsp sesame oil
3 ½ tbsp mirin
Directions:
In a mixing bowl, add the brown sugar, cornstarch, mirin, ginger, sesame oil, and soy sauce. Stir until well blended.
Add the chicken and toss until well coated by the mixture.
Cover the bowl, then place it inside the fridge. Allow the chicken to marinate for at least 2 hours.
Place a large skillet and turn the heat to medium-high.
Add oil and let it sizzle.
Add the chicken into the skillet and sear each side for a few minutes or until they turn golden brown.
Pour in the marinade, then reduce the heat to medium. Stir until the chicken thighs are well covered.
Simmer everything until the texture of the sauce becomes thick. Make sure to stir from time to time to coat each chicken.
Sprinkle your preferred herbs on top to garnish.
Serve immediately over rice and enjoy!
