Ingredients:
2 tbsp oil
2 lbs. boneless skinless chicken thighs (900g, cut into small chunks)
3 ½ tbsp soy sauce
1 tsp ginger (grated)
1 ½ tsp dark soy sauce
2 tbsp brown sugar
3 ½ tbsp mirin
1 tbsp cornstarch
1 ½ tsp sesame oil
Directions:
In a mixing bowl, add the soy sauce, mirin, chicken, brown sugar, cornstarch, ginger, and sesame oil. Stir everything until the chicken thighs are well coated.
Cover the bowl and allow the chicken to marinate for at least 2 hours.
Place a large skillet and turn the heat to medium-high.
Add oil and allow it to become hot.
Add the chicken into the skillet and sear each side for about a minute or until they turn brown.
Pour in the marinade and turn the heat to medium. Let everything simmer until the texture of the sauce becomes thick. Make sure to stir from time to time to coat the chicken thighs well.
Serve over rice and enjoy!
