Potato Candy! It may sound strange, but it is actually a recipe my family loved. You won’t even taste the potatoes, though some may find them gross.
While I am sure some people are put off by the title, they should realize that they are missing out. When you see everything, you will be able to thank me.
It tastes nothing like potatoes. This no-bake, soft candy is genius because of its inventiveness.

INGREDIENTS
6 cups powdered sugar plus additional if necessary
½ cup russet potato mashed and cooled (about one large potato).
⅓ cup creamy peanut butter
1 cup milk
1 teaspoon vanilla extract
⅛ teaspoon salt
PREPARATION
Mix the mashed potato, milk and vanilla in a large bowl. Beat on medium speed for about 2 minutes.
Add in the powdered sugar one cup at a while until you have a dough. After you have added 6 cups of powdered sugar, you can add 1 tablespoon at a time until you get a dough. The dough should be slightly thicker than cookie dough.
Make a ball of dough and sprinkle with powdered sugar. Roll the dough out to a rectangle of ⅛ inch thickness on a piece parchment or wax paper. Reduce the rectangle to 10×12 inches
Sprinkle powdered sugar on top of the dough. Place another piece parchment paper over it. Turn the dough rectangle upside down and remove the piece of parchment paper on the top. This is the one that you used to roll the dough.
Peanut butter should be evenly spread over the dough. Use parchment paper to guide the dough jelly-roll-style. Cover with parchment and freeze for one hour. Slice into ¼-inch slices and serve. Enjoy! Remaining candy should be kept in an airtight container in your refrigerator.
