Ingredients:
Roll-Ups (to make ahead and freeze)
16 uncooked lasagna noodles
1 lb lean (at least 80%) ground beef
½ lb bulk pork sausage
½ c chopped onion
1 ½ c tomato pasta sauce
2 containers (15 oz each) ricotta cheese
1 box (9 oz) frozen spinach, thawed, drained, and squeezed dry
2 tsp dried basil leaves or Italian seasoning
1 Egg
Sauce and cheese (for baking roll-ups)
3 c tomato pasta sauce
2 c shredded mozzarella cheese (8 oz)
Directions:
Place a 5-quart Dutch with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the lasagna noodles and cook until for to bite. Drain and rinse with water to stop the cooking process.
Place a 12-inch skillet on the stove and turn the heat to medium.
Add the ground beef, sausage, and onion. Cook until crumbly and brown. Discard any excess grease.
Add 1 ½ cup of pasta sauce, then turn the heat down to low. Stir until well mixed, then simmer for about 10 minutes and remove it from the heat.
In a mixing bowl, add the egg, spinach, basil, and ricotta cheese. Stir until well mixed.
Add 3 tbsp of the mixture on top of the lasagna and spread it evenly.
Add ¼ cup of meat mixture on top of the ricotta layer and roll it.
Line with aluminium foil a 15x10x1-inch baking pan.
Arrange the roll-ups into the prepared pan.
Apply cooking spray in two 13×9-inch glass baking dishes.
Fill each baking dish with eight roll-ups, then cover them with foil.
Place the baking dishes inside the freezer.
To Bake:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add 1 ½ cup of pasta sauce on top of the roll-ups, then cover them with foil.
Place them inside the preheated oven and bake for about 30 minutes or until done.
Sprinkle 1 cup mozzarella cheese over each baking dish.
Bake for another 5 minutes or until the cheese turns brown and melted.
Remove from the oven and allow them to cool for a few minutes.

Note:
Place the roll-ups in an airtight container, then place them inside the freezer. They can last up to 3 months.
