FOR THE SHRIMP:
Juice from one lemon
3 garlic cloves, minced
1 pound jumbo shrimp, peeled and deveined
4 tbsp (½ stick) unsalted butter, melted and divided
½ c dry white wine
¼ tsp black pepper
½ tsp salt
FOR THE TOPPING:
2 tablespoons butter, melted
Fresh parsley, finely chopped
¾ cup panko breadcrumbs
¼ cup Parmesan cheese, finely grated
½ teaspoon salt
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Add 2 tbsp of melted butter and wine into a 9×13-inch baking pan. Stir until well blended.
Place the pan inside the preheated oven and heat it for about 10 minutes to reduce its volume.
In a mixing bowl, add lemon juice, the rest of the butter, salt, pepper, and garlic. Stir until well blended. Add the shrimp, then toss until well coated.
In another bowl, add Parmesan cheese, breadcrumbs, 2 tbsp melted butter, and salt. Stir until well blended.
Remove the baking dish with the wine-butter mixture. Lay the shrimp over the sauce. Make sure to leave a small space between each shrimp.
Sprinkle the breadcrumb topping on top of the shrimp.
Place the baking pan inside the preheated oven and bake the shrimp for about 12 minutes or until done.
Broil for another 2 minutes or until the top turns golden brown.
Remove from the oven, then sprinkle freshly chopped parsley on top to garnish.
Serve and enjoy!
