Ingredients:
1 Large Zucchini halved lengthwise
Kosher salt and pepper, to taste
1 5 ounces Can Tuna drained
1 Stalk Celery finely chopped
½ small Red Onion diced
¼ c Plain Greek Yogurt
2 tablespoon Chopped Dill
1 teaspoon Dijon Mustard
1 tablespoon Fresh Lemon Juice
1 Jalapeno thinly sliced or chopped
¼ c Shredded Cheddar Cheese
OPTIONAL TOPPINGS:
Corn
Chopped Tomatoes
Red chilli peppers
Green Onions
Directions:
Step 1: Ready the oven. Preheat it to 350 degrees F. And with parchment paper, line a baking tray.
Step 2: In half lengthwise, slice the zucchini and scoop out the insides.
Step 3: Into the lined baking tray, place the zucchini and drizzle with cooking oil. To taste, season with salt and pepper. Place into the preheated oven into the middle rack position. And bake for approximately 12 to 15 minutes or until just tender.
Step 4: Combine the tuna, celery, red onion, yoghurt, dill, mustard, lemon juice, and jalapeño in a mixing bowl. As needed, season with salt and pepper.
Step 5: Fill the zucchini with the tuna mixture and sprinkle with cheddar.
Step 6: Bake further for another 10 minutes or until the cheese has melted.
