Flavorful and juicy chicken with Parmesan crust, what’s not to like? This spectacular dish is ready in less than an hour! Serve it with mashed potatoes, and prepare to fall in love. Enjoy!
Ingredients:
3 tbsp vegetable oil
4 skinless/boneless chicken breasts
Salt/Pepper, to taste
Marinade: (Shortcut- Use Italian Salad Dressing)
1 tsp lemon juice
1 tbsp minced garlic
⅓ c ranch dressing
½ tsp pepper
1 tsp distilled white vinegar
2 tbsp Worcestershire sauce
⅓ c olive oil
Parmesan Crust
4 tbsp melted butter
2 tsp garlic powder
½ c Provolone cheese, chopped into bits
¾ c panko breadcrumbs
½ c Parmesan cheese, chopped into bits
6 tbsp Buttermilk Ranch salad dressing, regular Ranch is fine as well
Directions:
For the Chicken:
In a mixing bowl, add all the ingredients for the marinade. Stir until well blended.
In a large freezer bag, add the chicken. Remove any air inside, then seal the bag.
Gently pound the chicken with a meat mallet to ½ inch thick.
Season the chicken with a bit of salt and pepper.
Add the chicken into another freezer bag together with the marinade. Seal the bag and marinate the chicken for about 30 minutes or overnight. ( I suggest you marinate the chicken overnight if you have more time. )
Place a skillet on the stove and turn the heat to medium-high.
Add 3 tbsp of vegetable oil and allow it to become hot.
Add the chicken into the hot skillet, then sear each side for about 5 minutes or until brown.
Transfer the seared chicken onto a baking sheet, then cover them with foil.
For the Parmesan Crust:
Prepare the oven and preheat to 450 degrees F low broil.
In a heat-proof mixing bowl, add the Ranch dressing, Parmesan cheese, and Provolone cheese. Stir until well mixed.
Place the bowl inside the microwave, then heat the mixture for a 15 seconds interval. Make sure to stir every 15 seconds until melted completely.
Pour the mixture over the seared chicken.
Place it inside the preheated oven and broil for about 3 minutes or until the cheese turns a bit golden brown.
In a mixing bowl, add garlic powder, panko breadcrumbs, and melted butter. Stir until well blended.
Pour the mixture over the chicken and spread it evenly. Broil for another minute or until the top turns brown.
Serve and enjoy!

This is best served with mashed potatoes.
