Enjoy these Loaded Smothered Beef Burritos in less than an hour! Loaded with incredible flavors, these delicious treats will never fail to satisfy all your cravings! A must-try recipe indeed!
Ingredients:
One 16 oz. can of refried beans
1 ½ c + 1 ½ c Mexican shredded cheese blend, divided
1 15 oz. can of red enchilada sauce (I used medium heat)
7 large flour tortillas (10-inch, burrito size)
1 small sweet Vidalia or white onion, diced small
1 8.5 oz. package of precooked rice (I used Spanish Rice)
1 1 oz. pack of taco seasoning (I used medium heat, reduced sodium)
1 pound ground beef (I used 90% lean)
cilantro, optional for garnishing
4 tbsp olive oil, divided
Directions:
Place a large skillet on the stove and turn the heat to medium-high. Add 2 tbsp of olive oil and allow it to become hot.
Add the beef, then cook for about 7 minutes or until crumbly and brown.
Add the onion, then sauté for a few minutes until soft.
Stir in the taco seasoning until well blended. Remove the skillet from the stove.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a large oven-safe skillet.
Add 2 tbsp of olive oil and allow it to become hot.
Place tortillas onto a flat surface, then top each with 2 tbsp of the refried beans, rice, and beef mixture. Spread them evenly.
Top each with the cheese, then roll it up.
Place them into the prepared skillet.
Place the skillet in the preheated oven and bake the burritos for 25 minutes.
Remove from the oven and drizzle the enchilada sauce and sprinkle the rest of the cheese on top.
Bake for 10 more minutes or until the cheese has melted completely.
