Ingredients:
2 pounds cauliflower florets cut in bite-size pieces
1 box (8 oz) cream cheese softened
½ c sour cream
1 ½ c sharp cheddar finely shredded
1 ½ c Monterey Jack cheese finely shredded
1 tsp garlic powder
½ tsp onion powder
6 slices crispy cooked bacon coarsely chopped
¼ c chopped fresh chives (reserve one tbsp for the topping)
Salt and Pepper to taste
Directions:
Place a pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the cauliflower and steam for about 10 minutes or until soft.
Drain the cauliflower into a colander.
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Apply cooking spray in a 9×13-inch baking dish.
Add sour cream, cheddar cheese, Monterey Jack cheese, cream cheese, onion powder, and garlic powder into a large mixing bowl. Stir until well combined.
Add half of the bacon, chives, and cauliflower. Stir until well mixed.
Sprinkle salt and pepper to taste.
Transfer the mixture into a casserole dish, then add the rest of the bacon on top.
Place it inside the preheated oven and bake for about 25 minutes or until the cheese has melted completely.
Remove from the oven and sprinkle the rest of the onion chives on top.
Serve warm and enjoy!
Notes:
Make sure that the cauliflower is a fork-tender.
Apply cooking spray in the casserole dish.
Be very generous with the amount of cheese and chives that you are going to add!
Sprinkle more pepper on top for the best experience.
