Ingredients:
For the Chicken
1 tbsp Olive Oil
2-3 tbsp Butter
1 egg
⅓ c All-purpose Flour
3 pieces Chicken Breasts
1 c Parmesan packed, grated fine
1 tsp Italian Seasoning or Oregano
½ tsp Salt
½ tsp Black Pepper
For the Sauce
½ c White Wine
Juice of one Lemon
1 tbsp Butter
To Garnish
Lemon Slices
Parsley fresh
Directions:
To Prepare and Cook the Chicken:
Divide the chicken breast into two by slicing it lengthwise.
Wrap each chicken slice with cling, then use a meat tenderizer to gently pound it.
Add salt, Italian seasoning, flour, and black pepper onto a clean plate.
On the second plate, add the cracked egg and whisk until creamy.
Add the grated Parmesan cheese onto the third plate.
Coat each chicken with the flour mixture, egg, and Parmesan cheese.
Arrange the coated chicken into a baking dish. Make sure to leave a small space between each chicken.
Place a skillet on the stove and turn the heat to medium.
Add butter and olive oil, then allow them to become hot.
Add the chicken pieces, then cook each side until done. Transfer onto a clean plate.
To Make the Sauce:
In the empty skillet, add another tbsp of butter and allow it to melt.
Add the white wine, then stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits.
Add the lemon juice, then stir until well blended. Simmer over low heat for a few minutes, then remove it from the stove.
Bring the chicken back into the skillet with the delicious sauce, then toss until well coated.
Sprinkle freshly chopped parsley on top to garnish.
Serve with lemon slices. Enjoy!
Note:
Feel free to use oregano instead of Italian seasoning.
