Ingredients:
4 chicken thighs bone-in, skin-on
1 tsp kosher salt plus more to taste
1 tsp lemon pepper
3 tbsp salted butter divided
3 cloves garlic, minced. or 1.5 teaspoon garlic paste
½ c low sodium chicken broth
1 c heavy cream
½ c grated parmesan cheese
¼ c fresh lemon juice
1 tsp fresh thyme leaves plus more for garnish
5 oz baby spinach one bag
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.\
In a mixing bowl, add the chicken thighs, lemon, salt, and pepper. Toss everything until the chicken thighs are well coated.
Place a medium skillet on the stove and turn the heat to medium-high.
Add 2 tbsp of butter and allow it to melt.
Add the chicken thighs and sear each side for about 5 minutes or until they turn golden brown. Remove from the skillet onto a clean plate.
In the same skillet, add 1 tbsp of butter and allow it to melt.
Add the garlic and saute until aromatic.
Add the heavy cream, chicken broth, Parmesan cheese, thyme, and lemon juice. Stir until well blended.
Allow the mixture to boil, then turn the heat down to low and simmer for a few minutes.
Add the spinach and stir until just wilted.
Put the chicken thighs back to the skillet and spoon the delicious sauce over.
Place the skillet inside the preheated oven and bake for about 25 minutes or until done.
Remove from the oven and allow it to cool for a few minutes.
Serve over pasta, mashed potatoes, or rice. Enjoy!
