Ingredients:
4 chicken thighs bone-in, skin-on
1 tsp kosher salt plus more to taste
1 tsp lemon pepper
3 tbsp salted butter divided
3 cloves garlic, minced. or 1.5 tsp garlic paste
½ c low sodium chicken broth
1 c heavy cream
½ c grated parmesan cheese
¼ c fresh lemon juice
1 tsp fresh thyme leaves plus more for garnish
5 oz baby spinach one bag
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
In a mixing bowl, add the chicken thighs, lemon, salt, and pepper. Toss until well combined.
Place a large skillet on the stove and turn the heat to medium-high.
Add 2 tbsp of butter and allow it to melt.
Add the chicken and sear each side for 4 minutes or until they turn golden brown.
Remove them from the skillet onto a clean plate.
Add 1 tbsp of butter into the same skillet and allow it to melt.
Add the garlic and sauté until aromatic.
Add the heavy cream, chicken broth, lemon juice, thyme, and Parmesan cheese. Stir until well combined.
Allow the mixture to boil, then turn the heat down to low and simmer for a few more minutes.
Add the spinach and cook until wilted.
Put the chicken back to the skillet.
Place the skillet inside the preheated oven and bake for about 25 minutes or until done.
Serve hot and enjoy!
Notes:
This dish is best served over mashed potatoes, rice, or pasta!
