Ingredients:
½ c milk
1 c fresh or frozen blueberries I used fresh
1 tbsp all-purpose flour
1 ½ c all-purpose flour
2 Eggs
2 tbsp fresh lemon juice
½ tsp vanilla extract
1 tsp baking powder
2 tsp fresh grated lemon zest
1 tsp salt
1 c granulated sugar
⅓ c unsalted butter, melted
For the Lemon Glaze
2 tbsp fresh lemon juice
2 tbsp butter, melted
½ tsp vanilla extract
½ c powdered sugar
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Line with parchment paper a loaf pan.
Add salt, flour, and baking powder into a mixing bowl. Whisk until well incorporated.
In a mixing bowl, add eggs, lemon juice, lemon zest, butter, vanilla, and sugar. Beat until well blended.
Transfer the flour mixture into the egg mixture together with milk, then beat until well incorporated.
Add the blueberries into a mixing bowl, then sprinkle flour on top. Toss until well coated.
Transfer the berries into the batter, then stir until just mixed.
Transfer the batter to the prepared pan and spread it evenly.
Place it inside the preheated oven and bake for about 55 to 65 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow the bread to cool for at least 30 minutes at room temperature.
For the Glaze:
Add vanilla, lemon juice, powdered sugar, and melted butter into a mixing bowl. Whisk until well blended.
Pour the glaze over the cooled bread and spread it evenly. Let it rest for a few more minutes.
