My husband is a big fan of Lebkuchen Cookies. These traditional glazed German Christmas Cookies are the perfect holiday season treat. These soft, chewy, and lightly glazed cookies are made with warming spices for that festive flair.
INGREDIENTS
Cookies:
2 large eggs
½ c. honey
2 tbsp butter
⅓ c. dark brown sugar
2 tsp orange zest
2 tsp lemon zest
½ tsp baking powder
¼ tsp baking soda
1 ½ tsp ground ginger
2 c. all-purpose flour
1 tsp almond extract
1 ½ tsp ground cinnamon
1 tsp ground nutmeg
½ tsp ground cloves
½ tsp allspice
Glaze:
2 tbsp powdered sugar
½ c. granulated sugar
¼ c. water
How to make Lebkuchen (German Christmas Cookies)
Step 1: Prepare the oven. Preheat it to 350 degrees F. Ready a baking sheet. Lightly grease and set aside.
Step 2: Place the honey, brown sugar, butter, eggs, lemon and orange zest, and almond extract in a large bowl. Mix well using an electric mixer until blended.
Step 3: To the wet ingredients, add the baking powder, baking soda, flour, and spices. Mix until well combined.
Step 4: Onto the prepared baking sheet, drop the dough by the tablespoon. Then, place in the preheated oven and bake for about 8 to 10 minutes or until the cookies are soft. Remove from the oven when done and place on a wire rack to cool.
Step 5: Place the sugar and water in a small saucepan. Bring to a boil and let the mixture boil for about a minute. Take the pan off the heat and stir in the powdered sugar.
Step 6: Dip the cooled cookies one by one into the glaze and let them cool completely before serving. You can also keep the cookies in an airtight container. To maintain the softness of, the cookies, place a slice of apple or orange peel in the container with the cookies. Enjoy!
