Ingredients:
CAKE:
1 ¼ cup water, boiling
1 cup oatmeal, old-fashioned, uncooked
½ cup butter
1 cup of sugar
1 cup brown sugar, firmly packed
2 Eggs
1 teaspoon vanilla
1 ½ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon cinnamon
½ teaspoon salt
¼ teaspoon nutmeg
TOPPING:
½ cup butter
2 cups coconut
1 cup nuts (finely chopped)
1 ½ cups brown sugar, firmly packed
8-10 Tablespoon evaporated milk
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 9×13-inch baking pan.
Step 3: In a bowl with boiling water, add in the oatmeal and let it sit for 20 minutes.
Step 4: In a small mixing bowl, add in the sugars, butter, and eggs. Beat until well mixed.
Step 5: Add in the oatmeal and vanilla. Stir until well combined.
Step 6: Add in baking soda, cinnamon, flour, nutmeg, and salt. Stir until well mixed.
Step 7: Transfer the mixture into the prepared baking pan.
Step 8: Place it inside the preheated oven and bake for 30 minutes until done.
Step 9: Remove from the oven and let it sit at room temperature to cool.
To Make the Topping:
Step 1: Place a saucepan on the stove and turn the heat to low.
Step 2: Add in the butter and allow it to melt.
Step 3: Add in nuts, coconut, milk, and brown sugar. Stir until well mixed.
Step 4: Remove from the heat.
Step 5: Spread the topping over the cooled cake.
Step 6: Place it inside the oven and broil until the colour turns brown.
Step 7: Remove from the oven and allow it to cool.
Step 8: Serve and enjoy!
