This Sun-Dried Tomato, Spinach, and Bacon Chicken is the best chicken recipe! Tender and juicy chicken breasts swimming in creamed spinach, sun-dried tomatoes, and bacon. This chicken dinner is an amazing, flavorful dish that everyone will surely love!
Ingredients
Baked Chicken Breasts:
1 tbsp butter
1.5-pound chicken (4 small chicken breasts or 2 large chicken breasts, sliced horizontally in half)
0.5-ounce Italian Dressing mix packet (half the packet)
Creamed spinach:
4 garlic cloves, minced
1 tbsp vegetable oil
6 ounces of baby spinach fresh
⅔ c. mozzarella cheese, shredded
⅛ tsp salt
⅔ c. half and half
Other ingredients:
4 slices Pepper Jack cheese or Monterey cheese with jalapenos
¼ c. sun-dried tomatoes, drained of oil, chopped into smaller bites
4 slices bacon cooked
How to make Sun-Dried Tomato, Spinach, and Bacon Chicken
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Grease the bottom of a baking dish with butter. Season both sides of the chicken breasts with an Italian salad dressing mix.
Step 3: Into the prepared baking dish, place the chicken breasts, flat-side down. Place in the preheated oven and bake for about 15 to 20 minutes.
Creamed spinach:
Step 4: In a large skillet, heat 1 tbsp vegetable oil over medium heat. Once the oil is hot, add the spinach to the skillet and cook for about 1 to 2 minutes until the spinach is heated through and begins to wilt.
Step 5: Take the skillet off the heat, then add the minced garlic and half-and-half.
Step 6: Return the skillet to the stove and bring everything to a boil. Then, add the mozzarella cheese and stir for about 30 minutes until melted. Decrease the heat to a simmer and continue to cook while stirring constantly until you have smooth creamed spinach. This takes another 30 seconds to a minute. If the creamed spinach is still watery, bring this to a boil again to cook off the extra liquid, stirring constantly. To taste, season with salt. Then, take the skillet off the heat.
Smothered Chicken Breasts:
Step 7: Once the chicken is done, remove the baking pan from the oven and top each chicken breast with the creamed spinach, drained and chopped sun-dried tomatoes, chopped cooked bacon, and broken slices of the pepper jack cheese.
Step 8: Return to the oven and bake for about 15 to 20 minutes, uncovered, until the chicken is no longer pink in the center and the juices run clear.
