Ingredients:
¼ c Parmesan cheese, shredded
1 pound sausage or hamburger
1 c mozzarella cheese, shredded
1 large Egg
20 jumbo pasta shells
¾ c ricotta cheese
¼ c frozen spinach, thawed and drained
2 c of your favourite spaghetti sauce
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and cook until al dente. Drain and rinse with cold water to stop the cooking process.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add about half a cup of tomato sauce into a 9×9-inch baking dish and spread it evenly.
Place a skillet on the stove and turn the heat to medium.
Add the sausage, then cook until crumbly and brown.
Add 1 cup of tomato sauce and stir until well mixed. Remove from the heat.
In a mixing bowl, add the egg, Parmesan cheese, spinach, ricotta, and ½ cup of mozzarella cheese. Stir until well combined.
Transfer the mixture into the skillet with the sausage. Stir until well mixed.
Fill each shell with a generous amount of the meat mixture.
Arrange them into the prepared baking dish. Make sure to leave a space between each stuffed shell.
Drizzle the rest of the sauce over the stuffed shells, then sprinkle a generous amount of mozzarella cheese on top of the sauce.
Cover everything with aluminium foil.
Place it inside the preheated oven and bake for about 20 minutes or until done.
Remove the foil cover and bake for another 10 minutes or until the cheese has melted completely.
Remove from the oven and allow it to cool for a few minutes at room temperature.
Serve warm and enjoy!
To Freeze:
Place the shells in a container, then place them inside the freezer. Reheat at 350 degrees F for about 45 minutes.
