Delicious and very comforting! This one-pot lasagna soup has incredible flavors that you will surely love! Easily throw this lasagna soup together in thirty minutes and enjoy a mouthwatering, cheesy, and the best dinner that your family deserves!
Ingredients
2 lbs ground beef
1 tbsp olive oil
1 yellow onion, diced
1 tbsp garlic, minced
1 tbsp Italian seasoning
4 cups (32 oz.) beef broth, (can add up to 4 more c. if you want a runnier soup)
1 jar (24 oz.) marinara sauce
1 can (28 oz.) crushed tomatoes
½ c. (119 grams) heavy cream
12 oz. Mafalda noodles – can use lasagna noodles broken
parsley to garnish
1 c. (113 grams) mozzarella cheese, shredded
1 c. (113 grams) jack cheese blend, shredded
2 tsp ground pepper
2 tsp kosher salt
How to make Lasagna Soup
Step 1: Into a large Dutch oven, heat the oil over medium heat. Once hot, add the onion and saute for about 3 to 4 minutes. Then, add the garlic and continue to cook for another minute.
Step 2: Add the ground beef into the skillet along with the Italian seasoning. Season with salt and pepper. Cook further, breaking the meat up as it cooks until the ground beef is brown. This takes another 8 to 10 minutes. If needed, drain the excess grease.
Step 3: Stir in the sauce, beef broth, and crushed tomatoes. Then, bring everything to a simmer. Add the noodles once the soup is simmering and cook for additional 8 minutes or until the noodles are al dente.
Step 4: Next, add the heavy cream along with the shredded mozzarella and Jack cheese. Stir well until the cheeses are melted.
Step 5: Remove from the heat when done, and serve the lasagna soup immediately garnished with some parsley. Enjoy!
Note:
If desired, you can garnish the soup with extra cheese. Italian cheese blend or fresh Parmesan is an amazing garnish option as well.
