Ingredients:
Homemade Marinara Sauce
1 tbsp olive oil
3 tsp finely chopped fresh oregano
3 tsp finely chopped fresh basil
1 28 oz. can of the whole, peeled tomatoes
1 clove of garlic, minced
Pinch red chilli flakes, optional
¾ tsp salt
⅓ tsp pepper
Lasagna Rolls
¾ c frozen chopped spinach, thawed and squeezed dry in a paper towel
1 ½ c ricotta cheese
Fresh parsley and basil, roughly chopped
Parmesan cheese
1 c grated mozzarella cheese
10 lasagna noodles, cooked
½ tsp salt
¼ tsp pepper
Directions:
For the Homemade Marinara Sauce:
Place a pot on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add garlic and sauté until aromatic.
Add the tomatoes and sauté until soft. Sprinkle salt and pepper to taste.
Simmer everything for about 15 minutes or until the volume of the sauce reduces.
Add the basil, oregano, and red chilli flakes. Stir until well mixed. Remove from the heat.
For the Lasagna Rolls:
In a mixing bowl, add ½ of the mozzarella cheese, ricotta cheese, spinach, salt, and pepper. Stir until well mixed.
Add ⅓ of the tomato sauce into the prepared baking dish and spread it evenly.
Add a lasagna noodle over the sauce and top it with the cheese filling. Roll and seal each noodle. Repeat the process with the rest of the ingredients.
Arrange the lasagna rolls into the prepared baking dish as well, then top them with the rest of the tomato sauce.
Sprinkle a generous amount of mozzarella cheese on top.
Cover the baking dish with foil, then place it inside the oven. Bake the lasagna rolls for about 15 minutes at 350 degrees F.
Remove the foil cover and bake for another 15 minutes.
Remove from the oven and garnish with freshly chopped parsley and basil. You may sprinkle more Parmesan cheese.
