Delicious and one of the best dinners I’ve made! These lasagna rolls are filled with amazing flavors. My family absolutely loves this!
Ingredients
Sauce:
4 tsp all-purpose flour
2 tbsp unsalted butter
1 ¼ c. whole milk
Pinch ground nutmeg
¼ tsp salt
⅛ tsp ground black pepper
Lasagna:
1 large egg (beaten to blend)
1 10-oz. package of frozen chopped spinach, thawed, squeezed dry
1 15-oz. container of whole milk ricotta cheese
3 oz. thinly sliced prosciutto (chopped)
¾ tsp salt (plus more for salting water)
1 c. plus 2 tbsp grated Parmesan
1 to 2 tbsp olive oil
2 c. marinara sauce
½ tsp freshly ground black pepper
1 c. shredded mozzarella (about 4 ounces)
12 uncooked lasagna noodles
How to make Lasagna Rolls
Step 1: To make the sauce, place the butter in a heavy medium saucepan. Melt over medium-low heat. Once melted, add the flour and stir for about 3 minutes. Pour in the milk, stirring. Adjust the heat to medium-high and keep stirring the sauce until it comes to a simmer. This takes about 3 minutes until the sauce has thickened and is smooth. Then, stir in the salt, pepper, and nutmeg.
Step 2: Prepare the oven. Preheat it to 450 degrees F.
Step 3: In a medium bowl, place the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper. Mix well until combined.
Step 4: To a large pot of boiling salted water, drizzle about 2 tbsp oil. Add the noodles and cook until al dente. Drain when done. On a baking sheet, arrange the noodles in a single layer. This will prevent the noodles from sticking.
Step 5: Grease a 13 x 9 x 2-inch glass baking dish. On the bottom of the dish, pour the bechamel sauce. On a work surface, lay out 4 lasagna noodles. Over each noodle, evenly spread a large spoonful of ricotta mixture. Roll each noodle beginning at 1 end such as a jelly roll. Over the bechamel sauce, lay the lasagna rolls seam-side-down. Make sure the lasagna rolls are not touching. Do the same with the rest of the noodles and ricotta mixture.
Step 6: Over the lasagna rolls, spoon 1 cup of marinara sauce and sprinkle with mozzarella followed by the rest of the 2 tbsp of Parmesan.
Step 7: Using foil, tightly cover the dish. Place in the preheated oven and bake for about 20 minutes or until the sauce bubbles. Remove the cover and bake for another 15 minutes or until the cheese is golden brown.
Step 8: Remove from the oven when done and allow the lasagna rolls to stand for about 10 minutes.
Step 9: In the meantime, heat the rest of the marinara sauce over medium heat until hot. Serve this alongside the Lasagna Rolls. Enjoy!
